ROCCA ROSA AND THE CUISINE
Giovanni, the grandfather, began in 1937 the restaurant business in the charming village of Brugnello, located in a wonderful position: a few houses and a church perched about 300 meters high overlooking one of the most spectacular loops of Trebbia river.
The business has been passed in the sixties to his daughters Rosa and Elide, superfine cooks, changing the usual summer opening in an annual opening.
The next generational shift has occurred in the 90s as the granddaughter Chiara took the reins of the room helped by Maura, a great connoisseur of the local cuisine and territory.
The culinary tradition of the province of Piacenza and the High Val Trebbia is the composition of various regional elements geographically contiguous. The province of Piacenza, in fact, is an offshoot of Emilia, but at the same time it is bordering Lombardy and Liguria, and for a handful of kilometers, Piedmont.
Each region has a feature that the Piacenza cuisine has absorbed and reworked: the sausage and stuffed pasta such as ravioli and homemade pastries from the Emilian tradition, rice cooked like risotto, inheritance from Lombary and Piedmont, the sausage, the "lüganega", from Lombardy and Venetian, the great use of vegetables, a legacy of the Ligurian cuisine.
The cuisine of Trebbia fits into this tradition and here they are also important the altitude, between 600 and 1000m, and climatic factors. It is a cuisine of territories largely based on an economy that could tear the earth any useful resource, both the result of hard agricultural labor and spontaneous gift of the forest and grassland (such as mushrooms, truffles, chestnuts, wild berries, wild blackberry).
The reception service is completed by five apartments inserted in the picturesque village of Brugnello and four rooms and other four apartments in Lago, about 10 minutes far from Brugnello, thus composing a mosaic of "widespread hospitality" that allows you to enjoy the magical "slow time" of these historic towns.
